Garlic Chicken Olive Oil Pasta

This is the pasta I made on our annual birthday weekend retreat. It was a recipe I found online with a quick Google search so the full credit goes to the Food Network Kitchen. It was easy to make, quick, and a simple success so just had to share! For the exact recipe, click the button below.

Ingredients

  • 1 pound linguine noodles

  • 3 cloves garlic, minced

  • ½ cup extra-virgin olive oil

  • 2 tablespoons chopped flat-leaf parsley

  • Kosher salt

  • Pinch red pepper flakes

Directions (makes 4-6 dishes)

  1. Bring large pot of water to a boil and salt generously. Add pasta and cook and stir occasionally until el dente. (about 8 minutes)

  2. While the pasta cooks, combine the garlic, olive oil, 1 teaspoon salt, and red pepper flakes in a large skillet and warm over low heat, stirring occasionally, until the garlic softens and turns golden. (about 8 minutes)

  3. Drain the pasta and save about ¼ cup of the cooking water. Add the pasta and the ¼ cup water to the garlic mixture. Mix well. Add the parsley and adjust seasoning to taste.

Chicken:

For the chicken, I purchased some boneless and skinless breasts. I spread salt, pepper, and freshly minced garlic on both sides. I grilled it on olive oil, until it was cooked well all the way through. Chop and place on pasta!

I made this again in 30 minutes at home and the kids absolutely loved it so this will be another simple dish I’ll add to my mom’s turn to cook menu! Hope it helps you too!
