Tofu Watercress Salad

This is one of my favorite salads and so easy to make at home.

Basically it’s watercress, tofu, tomato, canned salmon, and dressing. That’s it!

I tried a new version of it, “The Hawaiian Tofu and Watercress Salad” from Chef Sheldon Simeon and Garrett Snyder in their book “Cook Real Hawai`i.” The dressing recipe is spot on! Easy to make and full of flavor! But I did substitute spicy Taegu and raw shrimp for my canned salmon. :)

We got our watercress from Kula Haven Farms (upcountry Maui) and it was super ono! I highly recommend it.

Try it. This is a salad I could eat every week!
