Minestrone Soup

Rainy days means time to make soup.

I received Joanna Gaines’s cookbook, “Magnolia Table” for Christmas and had bookmarked a recipe for such a time as these recent rainy days. Classic Minestrone is a soup I only get on special occasions at Italian restaurants and wanted to make it to enjoy in the comfort of home.

My husband will tell you I’m notorious for always screwing up any time I make a new recipe. Really. He’s always nervous when I cook something brand new because it’s true, I always either measure something wrong or put in the wrong ingredient. This time, I forgot 2 ingredients, put in two of the ingredients 20 minutes too early, and you know what? It still came out fantastic!

So it’s a safe one to try friends! And it gets in so many vegetables, you feel good about yourself eating it and double win, my kids absolutely loved it!

This recipe makes a lot so you’ll be stocked up for nights or if you share, it will definitely be well received.

This was a fairly easy soup to make and even if you mess up, it will probably still turn out great! ;P
